The Pumpkin Project

In an attempt to feel fallish despite the lack of fallish weather in Uganda, I decided to buy a pumpkin yesterday.



I realize it looks like a watermelon, but it really is a pumpkin.

I have never in my life done anything with a pumpkin besides carve one, so I decided to challenge myself and make something good out of this bad boy.

So I roasted it up...



Mashed it into puree...



Toasted the seeds...



Made soup...



And made pumpkin scones! Watch out Starbucks.


The smell and taste of pumpkin gave us a small reminder that it's fall at home even though it feels like the middle of summer here. And now I have a mound of leftover pumpkin sitting in the fridge that I'm not quite sure what to do with...
